I like cauliflower, but I don't like serving an all white meal. I use this as a starch and then make a green veggie besides. It tastes great and I get an extra serving of vegetables - and even the kids like it.

Ingredients

  • 1
    head caluiflower
  • 1 large
    potato, peeled
  • 2 clove
    garlic, peeled
  • 1/2 c
    milk
  • 1/4 c
    parmesan cheese, grated

How to Make Fauxtatoes

Step-by-Step

  1. Cut cauliflower into uniform florettes. Cut potato into similar size pieces. (the smaller the pieces the less cooking time is needed) Put vegetables in a large pot and bring to a boil (about 20 min.) until fork tender, but not mushy.
  2. Drain vegetables in a colander, shaking off as much water a possible. Transfer into a mixer or food processor. Add remaining ingredients and process until desired consistency is achieved.
