How to Make Fauxtatoes
- Cut cauliflower into uniform florettes. Cut potato into similar size pieces. (the smaller the pieces the less cooking time is needed) Put vegetables in a large pot and bring to a boil (about 20 min.) until fork tender, but not mushy.
- Drain vegetables in a colander, shaking off as much water a possible. Transfer into a mixer or food processor. Add remaining ingredients and process until desired consistency is achieved.
