I got this recipe from our Home Economics teacher. It was her grandmother's recipe that she used after Easter using up leftover ham and eggs. I really love this dish.

Ingredients
- 3 medium potates, cooked, peeled, and sliced
- 4 - eggs, hard boiled, sliced
- 1 cup diced ham (optional)
- 1 - beaten egg
- 1/2 pint sour cream
- 1/2 cup buttered bread crumbs.
How To Make egg casserole

Step 1Generously grease with butter a 1 1/2 qt shallow baking dish. Layer poatotes (2-3 medium cooked, peeled, and sliced), then a layer of 4 hard boiled eggs sliced, and next 1 cup or more of diced ham. Bake at 350 for 15 minutes. Mix 1 beaten egg with 1/2 pt. of sour crea. Pour over potatoes, eggs and ham mixture. Then cover with 1/4 to 1/2 cup butter bread crumbs.

Step 2Crumbs: Melt 4 Tbsp. butter ina pan and add 1 cup plain breadcrumbs with 1 tbsp. parley. Cook till butter is absored and crumbs are browned.
