So easy to make. Creamy, cheesy and yummy! This is great for breakfast, but also goes well with some dinner recipes, like baked herbed chicken.

2 lb bag refigerated shredded hashbrown potatoes
2 c
light sour cream
2 c
reduced fat, shredded sharp cheddar cheese, plus 1/2 cup cheese for topping
2 can(s)
low-fat cream of chicken soup
1 bunch
green onions, sliced
2 c
crushed cornflakes

How to Make Easy, cheesy potato bake


  • 1Heat oven to 350. Lightly spray 9" x 13" casserole dish w/ cooking spray. In lg bowl, combine sour cream, 2 cups cheese, soup and onions, Mix well.
  • 2Add hashbrowns and mix well. In another bowl, mix remaining cheese w/ crushed cornflakes. Spoon potato mix into casserole dish. Cover, bake 40 mins.
  • 3Remove from oven, sprinkle cornflake mix evenly over top of casserole. Bake, uncovered 15 mis, or until top of casserole is browned lightly.
