We really like Sweet Potatoes any way they can be fixed, lately I've been trying the herbs and spicier way to fix them as a change, These are simple but good . This Recipe is from Better Homes and Garden Magazine

Ingredients
- 4 medium sweet potatoes
- 2 tablespoons coarse salt
- 1 tablespoon crushed cumin seeds
- 1 stick butter (softened )
- 1 tablespoon honey or maple syrup
- 1 teaspoon red pepper flakes (crushed )
- 12 - fresh sage leaves
- - waxed paper
How To Make cumin and salt rubbed baked sweet potatoes with spice butter

Step 1Pre-Heat Oven to 375 - Wash and scrub Sw. Potatoes , Mix togeather the salt and cumin - while the potatoes are still damp, Rub Potatoes with the salt- cumin mixture . Place Potatoes Directly on the oven rack - Turn the Potatoes Once while Baking ( so they will cook and get crispy on each side )

Step 2While potatoes are cooking make the Spice Butter - Lay out a piece of waxed paper - In a Bowl, stir togeather the softened butter, Honey OR Syrup ,and the crushed Red Pepper Flakes - Turn out onto the Waxed Paper - Shape into a Log and roll up in the wax paper and put in frig. to chill .

Step 3In a skillet OR saucepan , Put about 3 inches of oil, over medium Heat - Fry Sage Leaves about 2 minutes or till crispy - Drain on Paper Towles.

Step 4Take Potatoes out of oven and let cool 5 minutes - If desired, brush off some of the salt from the skins - With a Sharp Knife Split Potatoes Length wise - Push Ends Towards center to open Potato - Top each Potato with about 1 Tbs. of Spiced Butter and Sprinkle Fryed and Drained Sage Leaves over each potato.
