Ingredients
- 4 medium potatoes, unpeeled, chop 1 1/2 " pieces
- 1/8 teaspoon sea salt + 1/2 tsp
- 1 - 2 cloves garlic, fresh, minced
- 2 tablespoons fresh parsley, chopped
- 1 - small, fresh, thyme sprig, remove leaves
- 1 tablespoon tomato paste
- 2 teaspoons paprika
- 1/4 - 1/2 teaspoon white pepper
- 2 teaspoons virgin olive oil
- 2 tablespoons butter, melted
- 1 - 2 tablespoons lemon juice
- 1 - 2 teaspoons lemon, zest, garnish
- 1 - 2 tablespoons fresh parsley, chopped, garnish
How To Make crispy roasted potatoes

Step 1Preheat oven to 400 F.

Step 2Cover a cookie sheet with tin foil, then set aside until required.

Step 3Cook the potatoes in a pot of boiling salted water until almost tender about 10 minutes.

Step 4Add the following ingredients Into a large bowl: 1/2 tsp sea salt, garlic, parsley, thyme, tomato paste, paprika, white pepper, olive oil and melted butter. Mix well.

Step 5Drain the potatoes and add them into the large bowl, making sure all potatoes are well coated.

Step 6Place the potatoes on the prepared sheet, and bake in the preheated 400 oven for 40-50 minutes, turning halfway, until they are golden and crispy.

Step 7Remove the potatoes from oven and drizzle with the lemon juice. Taste and re-season with salt and pepper if necessary. Garnish with the parsley and lemon zest. Enjoy!
