Ingredients
- 4 cups left over mashed potatoes
- 1/4 cup onion (chopped)
- 2 cups panko bread crumbs (divided)
- 1 large egg (lightly beaten)
- 1/4 cup vegetable oil (more if needed)
How To Make crisp potato cakes

Step 1In a large bowl, combine the mashed potatoes, 1 cup panko, onion, & beaten egg.

Step 2Shape the potato mixture into 3 inch patties. Dredge the patties in the remaining 1 cup panko.

Step 3In a large nonstick skillet over medium heat, add the vegetable oil. add half of the patties and cook untill golden brown 2 to 3 minutes each side. Drain on paper towels. add the rest of the patties.
