4 cleft over mashed potatoes
1/4 conion (chopped)
2 cpanko bread crumbs (divided)
1 largeegg (lightly beaten)
1/4 cvegetable oil (more if needed)
How to Make Crisp Potato Cakes
- In a large bowl, combine the mashed potatoes, 1 cup panko, onion, & beaten egg.
- Shape the potato mixture into 3 inch patties. Dredge the patties in the remaining 1 cup panko.
- In a large nonstick skillet over medium heat, add the vegetable oil. add half of the patties and cook untill golden brown 2 to 3 minutes each side. Drain on paper towels. add the rest of the patties.
