creamy chive mashed tatoes for 2
Made this for this weeks date night with my boyfriend. Hes not really a rice man, but he loves potatoes. So this worked nicely with the Chicken. Was good & creamy.

Ingredients
- 6 - russet potatoes, peeled & quartered
- 1/4 cup chives, fresh & chopped
- 4 ounces mascarpone cheese
- 1 teaspoon salt
- 1 cup milk, warm
How To Make creamy chive mashed tatoes for 2

Step 1In a large pot place potatoes & cover with cold water.

Step 2Season with some salt & bring to a boil about 40mins or until tender.

Step 3Drain the potatoes & return to the pot. mash them with the warm milk until smooth.

Step 4Fold in the cheese & chives. Taste & season with more salt if need.
