How to Make Comfort Essentials: Awesome Mash Up

Step-by-Step

  1. PREP/PREPARE
  2. To peel or not to peel… That is the question.
I usually leave the peel on; however, the decision to peel or not is totally up to you.
  3. Mashing Potatoes
I am not going to tell you how to mash up your taters, because everyone has their own method. You could use a stick blender, a food processor, a fork, a potato masher… whatever.

The same holds true about their consistency. Thick, thin, lumpy, creamy, the choice is yours
  4. Gather your ingredients (mise en place).
  5. Add some water to a large pot and bring to a simmer. Add 1 teaspoon of salt, stir to dissolve, and add the taters.
  6. Allow them to simmer away until a paring knife goes in without resistance, about 35 – 40 minutes.
  7. If you want the process to go faster, then bring the water up to a boil.
  8. Drain the potatoes and place them in the empty pot over the turned-off burner.
  9. The residual heat from the pot will dry up any excess water.
  10. Add the butter and milk to a small saucepan and warm up enough to melt the butter into the milk.
  11. Mash the potatoes, using your favorite method, while adding the salt, pepper, sour cream, and the milk/butter mixture.
  12. Do not add all of the milk/butter mixture all a once. Add a bit at a time until you like the consistency.
  13. Do a final tasting for proper seasoning.
  14. PLATE/PRESENT
  15. Serve while nice and warm by themselves or with your favorite protein and veggies. Enjoy.
  16. Keep the faith, and keep cooking.
