- PLAN/PURCHASE
- 2 pounds russet potatoes
- 2 tablespoons sweet butter, unsalted
- 1/4 cup whole milk, half & half, or heavy cream
- 4 ounces sour cream, room temp
- 2 teaspoons salt, kosher variety, fine grind, divided
- 1/4 teaspoon white pepper, freshly ground

Step 2To peel or not to peel… That is the question. I usually leave the peel on; however, the decision to peel or not is totally up to you.

Step 3Mashing Potatoes I am not going to tell you how to mash up your taters, because everyone has their own method. You could use a stick blender, a food processor, a fork, a potato masher… whatever. The same holds true about their consistency. Thick, thin, lumpy, creamy, the choice is yours

Step 4Gather your ingredients (mise en place).

Step 5Add some water to a large pot and bring to a simmer. Add 1 teaspoon of salt, stir to dissolve, and add the taters.

Step 6Allow them to simmer away until a paring knife goes in without resistance, about 35 – 40 minutes.

Step 7If you want the process to go faster, then bring the water up to a boil.

Step 8Drain the potatoes and place them in the empty pot over the turned-off burner.

Step 9The residual heat from the pot will dry up any excess water.

Step 10Add the butter and milk to a small saucepan and warm up enough to melt the butter into the milk.

Step 11Mash the potatoes, using your favorite method, while adding the salt, pepper, sour cream, and the milk/butter mixture.

Step 12Do not add all of the milk/butter mixture all a once. Add a bit at a time until you like the consistency.

Step 13Do a final tasting for proper seasoning.

Step 14PLATE/PRESENT

Step 15Serve while nice and warm by themselves or with your favorite protein and veggies. Enjoy.
