How to Make Colcannon
- Cook potatoes until soft. Drain and mash.
- Slice butter stick into pieces. Add to the potatoes along with cream and beat together
- Boil cabbage drain and add to potatoes.
- Add second stick of butter making sure to coat all of the cabbage.
- Add the bacon and leeks; Simmer for 1/2 hour, salt and pepper to taste. SErve right away
