    small head cabbage, finely chopped
  • 2 stick
  • 1 1/2 c
    heavy cream
  • 1/2 lb
    bacon cooked and crumbled
  • 4
    leeks, chopped or 8 green onions if you don't have leeks
  • ·
    salt and pepper

How to Make Colcannon


  1. Cook potatoes until soft. Drain and mash.
  2. Slice butter stick into pieces. Add to the potatoes along with cream and beat together
  3. Boil cabbage drain and add to potatoes.
  4. Add second stick of butter making sure to coat all of the cabbage.
  5. Add the bacon and leeks; Simmer for 1/2 hour, salt and pepper to taste. SErve right away
