small head cabbage, finely chopped
2 stick
1 1/2 c
heavy cream
1/2 lb
bacon cooked and crumbled
leeks, chopped or 8 green onions if you don't have leeks
salt and pepper

How to Make Colcannon


  • 1Cook potatoes until soft. Drain and mash.
  • 2Slice butter stick into pieces. Add to the potatoes along with cream and beat together
  • 3Boil cabbage drain and add to potatoes.
  • 4Add second stick of butter making sure to coat all of the cabbage.
  • 5Add the bacon and leeks; Simmer for 1/2 hour, salt and pepper to taste. SErve right away
