A traditional Irish dish, Perfect for celebrating Lughnasadh or Ostara!

Ingredients

  • 3 pounds potatoes
  • 1 - small head cabbage, finely chopped
  • 2 sticks butter
  • 1 1/2 cups heavy cream
  • 1/2 pound bacon cooked and crumbled
  • 4 - leeks, chopped or 8 green onions if you don't have leeks
  • - salt and pepper

How To Make colcannon

  • Step 1
    Cook potatoes until soft. Drain and mash.
  • Step 2
    Slice butter stick into pieces. Add to the potatoes along with cream and beat together
  • Step 3
    Boil cabbage drain and add to potatoes.
  • Step 4
    Add second stick of butter making sure to coat all of the cabbage.
  • Step 5
    Add the bacon and leeks; Simmer for 1/2 hour, salt and pepper to taste. SErve right away
