This recipe I came upon in Cooking Light is very good, not to say healthy. My family really enjoy this with ranch dressing or by itself.

Ingredients

2 large
baking potatoes (cut into strips)
1 Tbsp
olive oil, extra virgin
2 tsp
chili powder
1/2 tsp
sea salt
1/2 tsp
oregano, dried
1/4 tsp
garlic powder
1/4 tsp
cumin

Step-by-Step

  • 1Preheat oven to 450*
  • 2Combine: all ingredients in a medium bowl, and toss well.
  • 3Arrange potatoes in a single layer on a baking sheet.
    Bake for 35 minutes or until potatoes are golden.
