These are sour cream and chives mashed potatoes with a little extra ingredients , Its hard for me to have potatoes that are just plain. This is a borrowed picture but thats what they look like.

Ingredients
- 3 pounds potatoes ; peeled and quartered
- 1 package cream cheese ( 8 oz.)
- 1/2 cup butter ; cubed
- 1/2 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 16 ounces sour cream
- 2 cups shredded cheddar cheese
- 3 - bacon strips , cooked & crumbled
- 1 tablespoon minced chives
How To Make cheesy sour cream and chives mashed potatoes

Step 1Place potatoes in large pan and cover with water. Bring to a boil ; reduce heat ; cover and simmer about 15-20 minutes until tender ; drain.

Step 2In a large bowl , mash potatoes . Beat in the cream cheese , butter , milk , salt and pepper until fluffy.

Step 3Transfer to a greased 3 quart baking dish.

Step 4Spread the sour cream over top.

Step 5Bake @ 350° for 10 minutes.

Step 6Sprinkle with the cheddar cheese , bacon and chives.

Step 7Bake uncovered for 5 minutes longer or until cheese is melted.
