cheesy sour cream and chives mashed potatoes

These are sour cream and chives mashed potatoes with a little extra ingredients , Its hard for me to have potatoes that are just plain. This is a borrowed picture but thats what they look like.

Ingredients

  • 3 pounds potatoes ; peeled and quartered
  • 1 package cream cheese ( 8 oz.)
  • 1/2 cup butter ; cubed
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 16 ounces sour cream
  • 2 cups shredded cheddar cheese
  • 3 - bacon strips , cooked & crumbled
  • 1 tablespoon minced chives

How To Make cheesy sour cream and chives mashed potatoes

  • Step 1
    Place potatoes in large pan and cover with water. Bring to a boil ; reduce heat ; cover and simmer about 15-20 minutes until tender ; drain.
  • Step 2
    In a large bowl , mash potatoes . Beat in the cream cheese , butter , milk , salt and pepper until fluffy.
  • Step 3
    Transfer to a greased 3 quart baking dish.
  • Step 4
    Spread the sour cream over top.
  • Step 5
    Bake @ 350° for 10 minutes.
  • Step 6
    Sprinkle with the cheddar cheese , bacon and chives.
  • Step 7
    Bake uncovered for 5 minutes longer or until cheese is melted.
