I did this instead of making individual potato cakes and frying them. Trying to get away from frying. You can add any combination of cheeses you like.

What to do with leftover mashed potatoes from your holiday meal? Try this potato bake. This has all the great flavor - and memories - of traditional potato pancakes but much easier to prepare. The extra mashed potato are doctored with shredded cheese and bread crumbs. Once they're baked, the potatoes are super cheesy and have a buttery flavor. In this recipe, the leftovers may be better than the original mashed potatoes.

Ingredients For cheesy mashed potato bake

  • 2 c
    leftover mashed potatoes
  • 1/4 c
    grated cheddar
  • 1/4 c
    grated Mexican cheese mix
  • 1
    egg
  • 1/2 c
    bread crumbs, dry (maybe a little less)
  • salt and pepper, to taste
  • 1 Tbsp
    butter
  • 1 pinch
    grated cheddar
  • 1 pinch
    grated Mexican cheese mix

How To Make cheesy mashed potato bake

  • Potatoes, Mexican cheese, cheddar cheese, salt, pepper, egg, and bread crumbs combined in a bowl.

    Mix together potatoes, 1/4 cup of each cheese, salt pepper, egg, and bread crumbs.
  • Pat of butter melting in a baking dish.

    Melt a pat of butter in a glass pie dish. This will keep potatoes from sticking and add flavor.
  • Potato mixture pressed into the baking dish.

    Place potato mixture in the dish and spread evenly.
  • Sprinkling cheese on top of potatoes.

    Top with remaining pinches of cheeses.
  • Potato bake baking in the oven.

    Bake for 30 minutes at 400 F.
