Ingredients

3 lb
new red potatoes or fingerlings
3 clove
garlic
1/4 c
butter
3 Tbsp
olive oil
1/4 c
grated parmesan cheese
1 tsp
lemon zest
juice of one lemon
2 Tbsp
chopped fresh basil (or parsley)
1/2 tsp
cornstarch
1 Tbsp
each of salt & pepper

How to Make CHEESY GARLIC POTATOES (SALLYE)

Step-by-Step

  • 1Preheat oven to 350ºF

    Spray 9" square baking dish with non-stick cooking spray (I use olive oil spray)
  • 2Scrub potatoes, do not remove peels

    Cut potatoes into halves or quarters and spread out in baking dish
  • 3In cast iron or heavy skillet, melt butter over medium heat

    Add olive oil

    Mince garlic and add to butter mixture; cook until garlic is translucent (about 3 minutes)

    Remove from heat
  • 4Add lemon juice, zest, salt, pepper, and cornstarch.

    Stir to mix into a quasi roux

    Add chopped basil (or parsley) and cheese

    Whisk briskly until well mixed

    Pour over potatoes in baking dish until all potatoes are covered

    Add a little cream or milk a tablespoon at a time if necessary to ensure all potatoes are covered.
  • 5Cover dish with foil and seal edges.

    Cook covered in preheated oven for 30 minutes

    Uncover and cook ten more minutes or until potatoes are golden brown
  • 6Best served while still hot
