How to Make CHEESY GARLIC POTATOES (SALLYE)

Step-by-Step

  1. Preheat oven to 350ºF

Spray 9" square baking dish with non-stick cooking spray (I use olive oil spray)
  2. Scrub potatoes, do not remove peels

Cut potatoes into halves or quarters and spread out in baking dish
  3. In cast iron or heavy skillet, melt butter over medium heat

    Add olive oil

Mince garlic and add to butter mixture; cook until garlic is translucent (about 3 minutes)

    Remove from heat
  4. Add lemon juice, zest, salt, pepper, and cornstarch.

Stir to mix into a quasi roux

Add chopped basil (or parsley) and cheese

    Whisk briskly until well mixed

Pour over potatoes in baking dish until all potatoes are covered

Add a little cream or milk a tablespoon at a time if necessary to ensure all potatoes are covered.
  5. Cover dish with foil and seal edges.

Cook covered in preheated oven for 30 minutes

Uncover and cook ten more minutes or until potatoes are golden brown
  6. Best served while still hot
