Ingredients
- 3 pounds new red potatoes or fingerlings
- 3 cloves garlic
- 1/4 cup butter
- 3 tablespoons olive oil
- 1/4 cup grated parmesan cheese
- 1 teaspoon lemon zest
- - juice of one lemon
- 2 tablespoons chopped fresh basil (or parsley)
- 1/2 teaspoon cornstarch
- 1 tablespoon each of salt & pepper
How To Make cheesy garlic potatoes (sallye)

Step 1Preheat oven to 350ºF Spray 9" square baking dish with non-stick cooking spray (I use olive oil spray)

Step 2Scrub potatoes, do not remove peels Cut potatoes into halves or quarters and spread out in baking dish

Step 3In cast iron or heavy skillet, melt butter over medium heat Add olive oil Mince garlic and add to butter mixture; cook until garlic is translucent (about 3 minutes) Remove from heat

Step 4Add lemon juice, zest, salt, pepper, and cornstarch. Stir to mix into a quasi roux Add chopped basil (or parsley) and cheese Whisk briskly until well mixed Pour over potatoes in baking dish until all potatoes are covered Add a little cream or milk a tablespoon at a time if necessary to ensure all potatoes are covered.

Step 5Cover dish with foil and seal edges. Cook covered in preheated oven for 30 minutes Uncover and cook ten more minutes or until potatoes are golden brown
