cheesy broccoli potato mash

In my household we love broccoli & potatoes. So I put this lovely delicious recipe together.

Ingredients

  • 1 pound yukon gold potatoes, cut into wedges
  • 4 cups broccoli florets
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup parmesan cheese, shredded
  • 1/2 cup non-fat milk
  • 1/2 teaspoon salt
  • - ground pepper to taste

How To Make cheesy broccoli potato mash

  • Step 1
    Bring an inch of water to a boil in a large saucepan fitted with a steamer basket. Add potatoes, cover & steam for 10min.
  • Step 2
    Place broccoli on top, cover and steam until potatoes and broccoli are tender, 6-8 minutes more.
  • Step 3
    Transfer the broccoli to a large bowl and coarsly mash with a potato masher.
  • Step 4
    Add the potatoes, cheese, milk, salt and pepper and continue mashing to desired consistency. Serve immediately. ENJOY!!
