breakfast potatoes for dinner

My husband gathered an assortment of peppers from our garden. Plus I had mini sweet peppers in the fridge of various colors. I decided to have Breakfast for dinner with sausages & eggs, it was easy quick & simple. Instead of cubing the potatoes, I decided to slice them. It was a simple easy & quick way to get dinner on the table in a hurry. We rarely ever have breakfast for dinner, but my husband agreed this was a great dinner idea. We loved it. I started not to post the recipe because I did not take picture steps, but it is simple enough that you should not have any problems.

Ingredients

  • 6 medium potatoes,peeled,sliced & washed
  • 2 medium yellow onion, peeled & sliced
  • 1 medium bell pepper,sliced into strips
  • 6 - mini sweet peppers,seeded & sliced
  • 2 medium hungarian peppers,seeded and chopped
  • 2 medium jalapeno peppers,seeded and chopped
  • 2 tablespoons olive oil
  • 1 teaspoon steak seasoning, or to taste
  • 4 cloves garlic, minced, or granulated garlc powder

How To Make breakfast potatoes for dinner

  • Step 1
    Peel, and slice potatoes, add to a medium size bowl, add in the sliced onions and peppers, add water & rinse thoroughly, & drain.
  • Step 2
    Add olive oil to a large skillet, I used a 12 inch cast iron skillet. Heat oil over medium high heat, then add in the potatoes, peppers & minced garlic. Stir occasionally to prevent sticking. Continue to cook until potatoes are tender. Reduce heat and cover with a lid & continue to cook about 20 to 25 minutes or so till potatoes are tender.
  • Step 3
    Add the spices about half way through cooking and stir to mix into potatoes. Serve while potatoes are still hot, can top with shredded cheese if desired or serve plain as I did. The peppers onions and garlic adds lots of flavor. Serve and enjoy.

    NOTE: I was in such a hurry to get dinner on the table, that I did not take the time to take step by step pictures, sorry. I served these with Eggs over light and Breakfast sausage patties.
