An easy to prepare side dish we've been making for years. Make sure to thaw the potatoes w/ onion & peppers -- otherwise, it takes MUCH longer to cook and it's MUCH harder to stir together the ingredients.

Ingredients For border potatoes

  • 1 pkg
thawed diced potatoes w/ onion & peppers (potatoes o'brien, approx 28-oz)
  • 2 Tbsp
    butter, melted
  • 1/2 c
    sour cream
  • 2-3 oz
    black olives, sliced
  • 1 pkg
    taco seasoning (1.25-oz)
  • 1 c
    cheddar cheese, shredded

How To Make border potatoes

  • 1
Preheat oven to 350°F. In a large mixing bowl, mix THAWED diced potatoes w/ onions & peppers with the rest of the ingredients. (Be sure your potatoes are THAWED; if you want to add salt and pepper, you're welcome to -- we have always just depended on the taco seasoning packet to season the dish and had salt and pepper at the table.)
