An easy to prepare side dish we've been making for years. Make sure to thaw the potatoes w/ onion & peppers -- otherwise, it takes MUCH longer to cook and it's MUCH harder to stir together the ingredients.

Ingredients
- 1 package thawed diced potatoes w/ onion & peppers (potatoes o'brien, approx 28-oz)
- 2 tablespoons butter, melted
- 1/2 cup sour cream
- 2-3 ounces black olives, sliced
- 1 package taco seasoning (1.25-oz)
- 1 cup cheddar cheese, shredded
How To Make border potatoes

Step 1Preheat oven to 350°F. In a large mixing bowl, mix THAWED diced potatoes w/ onions & peppers with the rest of the ingredients. (Be sure your potatoes are THAWED; if you want to add salt and pepper, you're welcome to -- we have always just depended on the taco seasoning packet to season the dish and had salt and pepper at the table.)

Step 2Spread into baking dish. Bake one hour, or until potatoes are hot all the way through.
