Some thing I came up with to use all the zucchii.. It is very easy,But oh so good.

Ingredients

Add to Grocery List

butter flavor cooking spray.
3/4 lb
red potatoes
1/2 lb
zucchini
2 medium
garlic cloves,crushed
2 Tbsp
olive oil, light
salt
fresh ground black pepper

How to Make Bob's Garlic-Roasted Potatoes and Zucchini

Step-by-Step

  • 1line a rimmed baking sheet with foil.Spray with cooking spray...Wash(but do not peel) red potatoes. Slice potatoes and zucchini abought 1/2 inch thick...Put potatoes,zucchini,and carlic in a mixing bowl. Pour in 2 tablespoons of olive oil.Toss to coat.
  • 2On the backing sheet put zucchini,potatoes,and garlic form a single layer...Turn on your broiler...Place baking sheet under broiler cook for 10 mniutes..Remove baking sheet and turn potatoes and zuchini over...Return to broiler and cook for 5-7 minutes or untill done...Remove and put in a serving bowl.. These go great with grilled pork chops.
