Some thing I came up with to use all the zucchii.. It is very easy,But oh so good.

    butter flavor cooking spray.
  • 3/4 lb
    red potatoes
  • 1/2 lb
  • 2 medium
    garlic cloves,crushed
  • 2 Tbsp
    olive oil, light
  • ·
  • ·
    fresh ground black pepper

How to Make Bob's Garlic-Roasted Potatoes and Zucchini


  1. line a rimmed baking sheet with foil.Spray with cooking spray...Wash(but do not peel) red potatoes. Slice potatoes and zucchini abought 1/2 inch thick...Put potatoes,zucchini,and carlic in a mixing bowl. Pour in 2 tablespoons of olive oil.Toss to coat.
  2. On the backing sheet put zucchini,potatoes,and garlic form a single layer...Turn on your broiler...Place baking sheet under broiler cook for 10 mniutes..Remove baking sheet and turn potatoes and zuchini over...Return to broiler and cook for 5-7 minutes or untill done...Remove and put in a serving bowl.. These go great with grilled pork chops.
