Ingredients
- 2 cups peeled and diced jerusalem artichokes
- 1 cup dried pinto beans
- 1 cup almound milk
- 1 cup water
- 4 tablespoons earth balance
- 3/4 tablespoon adobo
- 5 - chives, finely chopped
- - salt and pepper to taste
How To Make better than mashed potatoes

Step 1Boil the Jerusalem artichokes and beans for 20 mins. Drain both. Place in food processor.

Step 2Add all ingredients except chives. Blend till puree is formed. Add more water and almound milk for thinner mash. Mix in diced chives by hand. Place in serving bowl. Bon Appetit!
