bacon wrapped sweet potatoes
Lynn Socko gave me this idea from a recipe that she had, she used regular white po's. I was telling my BF about them and he said well why not do that with sweet po's and there you have it. I did this in the smoker, but of course you could very easily bake these in the oven. I don't know how long in the oven, but it took about 4 hours at 200° in the smoker, turning them once.

Ingredients
- 2 small sweet potatoes
- 8 teaspoons cream cheese, any kind
- 8 small slices mozarella to fit on cream cheese
- 8 - slices bacon
- 1/4 cup maple syrup
How To Make bacon wrapped sweet potatoes

Step 1Peel and cut the potatoes into wedges. I used small sweet potatoes and got 8 wedges total.

Step 2In the center of each wedge put a smear of cream cheese, then a small slice of mozarella, the mozarella will stick to the cream cheese.

Step 3Wrap bacon around making sure all the cheese is covered,

Step 4Drizzle with maple syrup.

Step 5Put in the smoker directly on the grates, I can't tell you how long because every smoker is different. In mine it took 4 hours at 200°. You could of course bake these in the oven.
