air fryer essentials: spicy, crispy cubed taters

I find myself using my air fryer more-and-more. Not so much for my catering business, but as a mini oven to cook up meals at home for one or two people. This recipe is so easy to make, I find myself making it when I am home alone, and I want a “somewhat” healthier thing to eat than the more common snack foods. With or without a dipping sauce, they are a tasty treat, by themselves, or as a side dish for a meal. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 1 large russet potato (per person)
  • SPICES (PER POTATO)
  • 1 tablespoon grapeseed oil
  • 1/4 teaspoon sweet paprika
  • 1/4 teaspoon salt, kosher variety, to taste
  • 1/4 teaspoon white pepper, freshly ground
  • 1 pinch garlic powder, or to taste
  • 1 pinch cayenne pepper, or to taste
  • ADDITIONAL ITEMS
  • cold water
  • OPTIONAL ITEMS
  • chopped onions, or bell pepper
  • hot sauce, on the side, i like frank's

    PREP/PREPARE
  • Step 2
    To make this recipe, you will need an air fryer. Understand that not all of these devices operate with the same power. You may need to adjust the times to best suit your machine.
  • Step 3
    One of the steps that make these potatoes crispy is the soaking. Do not skip this step. Soaking potatoes in cold water removes the extra starch from the potatoes and results in a potato that is completely crisp with a tender interior.
  • Step 4
    Gather your ingredients (mise en place).
  • Step 5
    Peel and dice the potato; making sure that the cubes are as equal in thickness as possible.
  • Step 6
    Optimum cube size would be from 1/2 to 3/4 inches (1.2 to 2cm). But do not drag out your ruler; just eyeball it. And, understand, the smaller they are, the faster they cook.

    Fill a bowl with cold water, toss in the potato cubes, and let them soak for 30 – 40 minutes.

    Remove from the water bath, and pat dry with some paper towels.

    Set your air fryer to 400f (205c) and preheat for a couple of minutes.

    Add the oil and spices to a bowl and stir to combine.

    I just dried out the bowl I used to soak the potatoes and used it.

    Add the potatoes and toss with the oil/spice mixture.
  • Step 13
    Feel free to vary the spices to suit your particular tastes.

    Place the potatoes into the basket of your air fryer and cook until they are crispy and cooked through, about 15 – 20 minutes.

    Give the basket a shake every few minutes.
