Ingredients

  • 1(16oz) package penne pasta, uncooked
  • 2 cloves garlic,minced
  • 2 medium zucchini,sliced
  • 1 cup ricotta cheese
  • 1 cup half and half
  • 1 teaspoon basil, dried or fresh
  • 1/2 cup shredded parmesan cheese
  • - salt and pepper

How To Make zucchini ricotta pasta

  • Step 1
    Cook pasta,drain it and keep it warm.Meanwhile,the heat oil. Add garlic and zucchini and cook 5 minutes or until tender.
  • Step 2
    In a small bowl ,combine ricotta cheese,half-and-half, and salt and pepper. Stir until well blended.Add to zucchini mixture. Cook and stir until hot.
  • Step 3
    In a large serving bowl,combine cooked pasta, zucchini mixture and basil.Toss gently to mix and sprinkle with Parmesan cheese.
