1(16oz) pkg
penne pasta, uncooked
2 clove
garlic,minced
2 medium
zucchini,sliced
1 c
ricotta cheese
1 c
half and half
1 tsp
basil, dried or fresh
1/2 c
shredded parmesan cheese
salt and pepper

How to Make Zucchini Ricotta Pasta

Step-by-Step

  • 1Cook pasta,drain it and keep it warm.Meanwhile,the heat oil. Add garlic and zucchini and cook 5 minutes or until tender.
  • 2In a small bowl ,combine ricotta cheese,half-and-half, and salt and pepper. Stir until well blended.Add to zucchini mixture. Cook and stir until hot.
  • 3In a large serving bowl,combine cooked pasta, zucchini mixture and basil.Toss gently to mix and sprinkle with Parmesan cheese.
