My Mom's Homemade Noodles
3 largeeggs, this serves around 4 people, if you need more just add an egg per person
1/2 largethe large egg shell end, fill with milk the amount of eggs you used, so if 3 use 3 eggshells of milk
2+ call purpose flour, add flour till you form a ball that is pliable not sticky
1 tspbaking powder, optional, if you want them to really puff up when cooked, i hardly ever use this step
How to Make My Mom's Homemade Noodles
- Combine eggs, milk, and salt. If you want you can also add the baking powder. Beat egg mixture until combined well. Then start adding flour until mixture will form a ball and keep adding flour until it is no longer sticky. Roll out on floured surface and let dry for 3 hours. Then roll into log and cut at 1/2 inch. Unroll and break into noodles.I put more flour in at that time. When your Broth is hot put a few at a time and stir with fork to keep them from clumping together.Add all noodles and flour and the broth will become gravey like. These are also good for soups.
