Ingredients

  • 1 large
    large fresh cauliflower
  • 1 c
    salt free chicken broth
  • 4 oz
    light cream cheese
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 1 Tbsp
    butter

How to Make Faux Mashed Potatoes

Step-by-Step

  1. Cut cauliflower into florets.
  2. Cook in medium pot with chicken broth until tender.
  3. Drain and add remaining ingredients and mash.
