  • 1 large large fresh cauliflower
  • 1 cup salt free chicken broth
  • 4 ounces light cream cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon butter

How To Make faux mashed potatoes

  • Step 1
    Cut cauliflower into florets.
  • Step 2
    Cook in medium pot with chicken broth until tender.
  • Step 3
    Drain and add remaining ingredients and mash.
