This recipe has been in the family for many years. It is great with almost anything you would want to use it in or on. I use it in my potato salad instead of sweet pickles.

Makes 5 pints
Ingredients
- 2 cups zucchini, finely chopped
- 1 cup onion, finely chopped
- 1/2 cup green pepper, finely chopped
- 1/2 cup red pepper, finely chopped
- 1 3/4 cups sugar
- 2 teaspoons celery seed
- 1 teaspoon dry mustard
- 2 tablespoons salt
- 1 cup apple cider vinegar
How To Make zucchini relish

Step 1Prepare jars and lids for canning process.

Step 2Combine all vegetables in large bowl, sprinkle with salt. Cover with cold water and let stand for at least 2 hours. Drain and rinse.

Step 3Combine remaining ingredients in a large pot. Bring to a boil. Add vegetables. Simmer 10 minutes.

Step 4Put mixture in hot jars. Process in a hot water bath for 10 minutes. Let cool, then make sure the lids have sealed. If not sealed, repeat hot bath.
