zucchini relish

This recipe has been in the family for many years. It is great with almost anything you would want to use it in or on. I use it in my potato salad instead of sweet pickles.

Ingredients

  • 2 cups zucchini, finely chopped
  • 1 cup onion, finely chopped
  • 1/2 cup green pepper, finely chopped
  • 1/2 cup red pepper, finely chopped
  • 1 3/4 cups sugar
  • 2 teaspoons celery seed
  • 1 teaspoon dry mustard
  • 2 tablespoons salt
  • 1 cup apple cider vinegar

How To Make zucchini relish

  • Step 1
    Prepare jars and lids for canning process.
  • Step 2
    Combine all vegetables in large bowl, sprinkle with salt. Cover with cold water and let stand for at least 2 hours. Drain and rinse.
  • Step 3
    Combine remaining ingredients in a large pot. Bring to a boil. Add vegetables. Simmer 10 minutes.
  • Step 4
    Put mixture in hot jars. Process in a hot water bath for 10 minutes. Let cool, then make sure the lids have sealed. If not sealed, repeat hot bath.
