This recipe has been in the family for many years.
It is great with almost anything you would want to use it in or on. I use it in my potato salad instead of sweet pickles.

Ingredients

  • 2 c
    zucchini, finely chopped
  • 1 c
    onion, finely chopped
  • 1/2 c
    green pepper, finely chopped
  • 1/2 c
    red pepper, finely chopped
  • 1 3/4 c
    sugar
  • 2 tsp
    celery seed
  • 1 tsp
    dry mustard
  • 2 Tbsp
    salt
  • 1 c
    apple cider vinegar

How to Make Zucchini Relish

Step-by-Step

  1. Prepare jars and lids for canning process.
  2. Combine all vegetables in large bowl, sprinkle with salt. Cover with cold water and let stand for at least 2 hours. Drain and rinse.
  3. Combine remaining ingredients in a large pot. Bring to a boil. Add vegetables. Simmer 10 minutes.
  4. Put mixture in hot jars. Process in a hot water bath for 10 minutes. Let cool, then make sure the lids have sealed. If not sealed, repeat hot bath.
