Zucchini Relish

It is great with almost anything you would want to use it in or on. I use it in my potato salad instead of sweet pickles.

Ingredients

2 czucchini, finely chopped

1 conion, finely chopped

1/2 cgreen pepper, finely chopped

1/2 cred pepper, finely chopped

1 3/4 csugar

2 tspcelery seed

1 tspdry mustard

2 Tbspsalt

1 capple cider vinegar
How to Make Zucchini Relish
- Prepare jars and lids for canning process.
- Combine all vegetables in large bowl, sprinkle with salt. Cover with cold water and let stand for at least 2 hours. Drain and rinse.
- Combine remaining ingredients in a large pot. Bring to a boil. Add vegetables. Simmer 10 minutes.
- Put mixture in hot jars. Process in a hot water bath for 10 minutes. Let cool, then make sure the lids have sealed. If not sealed, repeat hot bath.
