This recipe has been in the family for many years. It is great with almost anything you would want to use it in or on. I use it in my potato salad instead of sweet pickles.

Ingredients For zucchini relish

2 czucchini, finely chopped

1 conion, finely chopped
-
1/2 cgreen pepper, finely chopped

1/2 cred pepper, finely chopped

1 3/4 csugar
-
2 tspcelery seed
-
1 tspdry mustard
-
2 Tbspsalt
-
1 capple cider vinegar
How To Make zucchini relish

1Prepare jars and lids for canning process.

2Combine all vegetables in large bowl, sprinkle with salt. Cover with cold water and let stand for at least 2 hours. Drain and rinse.

3Combine remaining ingredients in a large pot. Bring to a boil. Add vegetables. Simmer 10 minutes.

4Put mixture in hot jars. Process in a hot water bath for 10 minutes. Let cool, then make sure the lids have sealed. If not sealed, repeat hot bath.
