A local car dealership has "The Ivy Bakeshop" in it. Giving it's customers a lovely place to catch a bite to eat while their car is being serviced. While this small cafe puts out many delicious desserts it is their "Warm Onion Pie" I crave. When I saw they had a cookbook. I had to have it. Now, I can share it with you.

Ingredients

  • 1 cup butter, divided
  • 1 cup breadcrumbs
  • 1 teaspoon salt
  • 3 cups diced sweet onions
  • 1 tablespoon flour
  • 2 cups finely grated swiss cheese
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1 cup scalded milk
  • 3 - well beaten eggs

How To Make warm onion pie

  • Step 1
    Preheat oven to 350*. Melt half the butter and mix with breadcrumbs and salt.
  • Step 2
    Place in a well greased 8 inch pie pan and press into bottom and up the sides.
  • Step 3
    Saute onions in remaining butter slowly, stirring constantly, until onions are clear and tender. Remove from heat, drain onions and place over crust.
  • Step 4
    Combine flour, cheese, salt and cayenne pepper. Scald milk, add eggs and stir. Add milk mixture to cheese mixture. Carefully pour batter over onions.
  • Step 5
    Bake at 350* for approximately 30 min. or until golden brown. Yield 6-8 servings.
