A local car dealership has "The Ivy Bakeshop" in it. Giving it's customers a lovely place to catch a bite to eat while their car is being serviced. While this small cafe puts out many delicious desserts it is their "Warm Onion Pie" I crave. When I saw they had a cookbook. I had to have it. Now, I can share it with you.

Ingredients

1 c
butter, divided
1 c
breadcrumbs
1 tsp
salt
3 c
diced sweet onions
1 Tbsp
flour
2 c
finely grated swiss cheese
1 tsp
salt
1/4 tsp
cayenne pepper
1 c
scalded milk
3
well beaten eggs

How to Make Warm Onion Pie

Step-by-Step

  • 1Preheat oven to 350*.
    Melt half the butter and mix with breadcrumbs and salt.
  • 2Place in a well greased 8 inch pie pan and press into bottom and up the sides.
  • 3Saute onions in remaining butter slowly, stirring constantly, until onions are clear and tender. Remove from heat, drain onions and place over crust.
  • 4Combine flour, cheese, salt and cayenne pepper. Scald milk, add eggs and stir.
    Add milk mixture to cheese mixture.
    Carefully pour batter over onions.
  • 5Bake at 350* for approximately 30 min. or until golden brown.
    Yield 6-8 servings.
