Ooey Gooey, Three Cheese Quinoa. It isn't as bad for you as it sounds!

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup white onions, chopped
  • 1/2 - green bell pepper, chopped
  • 2 cloves garlic, chopped
  • 1/2 - hatch chile pepper, chopped
  • 1 cup quinoa
  • 2 cups chicken stock
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 ounces goat cheese
  • 4 slices horseradish cheddar (pepper jack if you can't find this)
  • 1/4 cup fresh parmesan

How To Make three cheese creamy quinoa

  • Step 1
    In a medium sized sauce pan, saute onion, garlic, bell pepper, and hatch chile in olive oil for about 5 minutes.
  • Step 2
    Add in quinoa and chicken stock. Bring to a boil, then let simmer until all the stock has absorbed.
  • Step 3
    Sprinkle in salt, pepper, and three cheeses. Stir together and adjust seasoning to taste.
