skillet pierogis & peppers
This is my quick solution to getting dinner to the table fast. Pierogi's are one of our all time favorites, and while I make them from scratch, see my recipe posted here. Many times I rely on the frozen variety for a quick meal idea. This was one of those days. We also love to have Smoked Polish and Kraut when ever we have the Pierogi's as well. Using the electric skillet for the Pierogi's, and the large skillet on the stove for the kraut helped to make a quick tasty and delicious meal. Everyone of us made happy plates. I love it when a plan comes together so quickly. Give it a try.

Ingredients
- 2 pounds frozen pierogis, any flavor desired
- 3/4 stick butter or margarine
- 6-8 medium mini sweet peppers, assorted colors
- 2 large onions, sliced
- - steak seasoning to taste as desired
How To Make skillet pierogis & peppers

Step 1When there is no time to make my own pierogis, I like to keep these in the freezer for convenience.

Step 2Bring large pot of water to a boil. Then drop in frozen pierogis, and cook until they begin to float to top of water. Then using a slotted spoon, remove them to a large platter. Repeat until all pierogis have been cooked.

Step 3Melt butter in a large skillet, I used my large electric skillet, then add in the sliced onions and peppers and saute about 5 minutes.

Step 4Next add in the cooked pierogis, and cook and stir until heated through and slightly browned . Season as desired. Remove from heat and serve while still hot. Sprinkle with chopped chives or parsley if desired before serving.
