If you are wondering how to prepare this ancient grain, this will take away the mystery. I tried this recipe for the first time last week and loved it. I recommemd that you serve this with a dollop of sour cream for a little added creaminess. I got this recipe from allrecipes and made some of my own adjustments. I don't care for cilantro so I used Parsley and added the sour cream.

Ingredients For quinoa and black beans

1 tspvegetable oil

1onion, chopped
-
3cloves of garlic, peeled and chopped

3/4 cuncooked quinoa

1 1/2 cvegetable broth

1 tspground cumin
-
1/4 tspcayenne pepper
-
salt and pepper to taste
-
1 cfrozen corn kernals
-
215 oz cans of black beans, rinsed

1/2 cchopped fresh cilantro
How To Make quinoa and black beans

1Heat the oil in a medium saucepan over medium heat. stir in the onion and garlic, saute until lightly browned.

2Mix quinoa and cover with vegetable broth. Season with cumin,cayenne pepper, salt and pepper. Bring the mixture to a boil. Cover, reduce heat and simmer 20 minutes.

3Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.

4Cooks note: Serve with a dollop of sour cream. Also, I recommend using Bob's red mill brand quinoa because it is already rinsed and does not have any bitter flavor. Also, the quinoa will look be clear and tender when done.
