If you are wondering how to prepare this ancient grain, this will take away the mystery. I tried this recipe for the first time last week and loved it. I recommemd that you serve this with a dollop of sour cream for a little added creaminess.
I got this recipe from allrecipes and made some of my own adjustments. I don't care for cilantro so I used Parsley and added the sour cream.

Ingredients

vegetable oil
1
onion, chopped
3
cloves of garlic, peeled and chopped
3/4 c
uncooked quinoa
1 1/2 c
vegetable broth
1 tsp
ground cumin
1/4 tsp
cayenne pepper
salt and pepper to taste
1 c
frozen corn kernals
2
15 oz cans of black beans, rinsed
1/2 c
chopped fresh cilantro

How to Make Quinoa and Black beans

Step-by-Step

  • 1Heat the oil in a medium saucepan over medium heat. stir in the onion and garlic, saute until lightly browned.
  • 2Mix quinoa and cover with vegetable broth. Season with cumin,cayenne pepper, salt and pepper. Bring the mixture to a boil. Cover, reduce heat and simmer 20 minutes.
  • 3Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.
  • 4Cooks note: Serve with a dollop of sour cream. Also, I recommend using Bob's red mill brand quinoa because it is already rinsed and does not have any bitter flavor. Also, the quinoa will look be clear and tender when done.
