quinoa and black beans

If you are wondering how to prepare this ancient grain, this will take away the mystery. I tried this recipe for the first time last week and loved it. I recommemd that you serve this with a dollop of sour cream for a little added creaminess. I got this recipe from allrecipes and made some of my own adjustments. I don't care for cilantro so I used Parsley and added the sour cream.

Ingredients

  • 1 teaspoon vegetable oil
  • 1 - onion, chopped
  • 3 - cloves of garlic, peeled and chopped
  • 3/4 cup uncooked quinoa
  • 1 1/2 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • - salt and pepper to taste
  • 1 cup frozen corn kernals
  • 2 - 15 oz cans of black beans, rinsed
  • 1/2 cup chopped fresh cilantro

How To Make quinoa and black beans

  • Step 1
    Heat the oil in a medium saucepan over medium heat. stir in the onion and garlic, saute until lightly browned.
  • Step 2
    Mix quinoa and cover with vegetable broth. Season with cumin,cayenne pepper, salt and pepper. Bring the mixture to a boil. Cover, reduce heat and simmer 20 minutes.
  • Step 3
    Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.
  • Step 4
    Cooks note: Serve with a dollop of sour cream. Also, I recommend using Bob's red mill brand quinoa because it is already rinsed and does not have any bitter flavor. Also, the quinoa will look be clear and tender when done.
