Quinoa and Black beans
I got this recipe from allrecipes and made some of my own adjustments. I don't care for cilantro so I used Parsley and added the sour cream.

1 tspvegetable oil
3cloves of garlic, peeled and chopped
3/4 cuncooked quinoa
1 1/2 cvegetable broth
1 tspground cumin
1/4 tspcayenne pepper
·salt and pepper to taste
1 cfrozen corn kernals
215 oz cans of black beans, rinsed
1/2 cchopped fresh cilantro
How to Make Quinoa and Black beans
- Heat the oil in a medium saucepan over medium heat. stir in the onion and garlic, saute until lightly browned.
- Mix quinoa and cover with vegetable broth. Season with cumin,cayenne pepper, salt and pepper. Bring the mixture to a boil. Cover, reduce heat and simmer 20 minutes.
- Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.
- Cooks note: Serve with a dollop of sour cream. Also, I recommend using Bob's red mill brand quinoa because it is already rinsed and does not have any bitter flavor. Also, the quinoa will look be clear and tender when done.
