- 16 ounces bag of pinto or anasazi beans
- - smoke ham hock or leftover ham bone
- 1 teaspoon cumin, opt
- 2 tablespoons chili powder
- 2 cloves garlic, peeled
- 1 - whole jalapeno, opt
- OR
- 1/4 cup pinto seasoning
- 2 cloves garlic
- 1 - whole jalapeno

Step 1I found these recently at a local store and decided to try them, they are similar in taste to pinto but with a milder "bean" flavor. They are really outstanding and my new go to bean!

Step 2NOTE: This is a crockpot recipe. These can also be made on the stove top, reduce cooking time to about 2-3 hrs. over a med. simmer.Ham hocks can usually be found in the section of your store where the whole hams are sold. If not using ham hocks, salt pork or bacon, but the ham hocks give you more flavor!

Step 3Rinse beans and pick out any bad ones. Using "Casserole" brand is recommended. Place all ingredients in crockpot. Fill crockpot 2/3 full of water. Turn on low and cook overnight. May need to reseason with a tsp of cumin, chili pwd. or salt after cooking.
