Pinto or Anasazi Beans
NOTE: to reduce the fat, omit ham hock or salt pork/bacon.
16 ozbag of pinto or anasazi beans
·smoke ham hock or leftover ham bone
1 tspcumin, opt
2 Tbspchili powder
2 clovegarlic, peeled
1whole jalapeno, opt
1/4 cpinto seasoning
How to Make Pinto or Anasazi Beans
- NOTE: This is a crockpot recipe. These can also be made on the stove top, reduce cooking time to about 2-3 hrs. over a med. simmer.Ham hocks can usually be found in the section of your store where the whole hams are sold. If not using ham hocks, salt pork or bacon, but the ham hocks give you more flavor!
- Rinse beans and pick out any bad ones. Using "Casserole" brand is recommended. Place all ingredients in crockpot. Fill crockpot 2/3 full of water. Turn on low and cook overnight. May need to reseason with a tsp of cumin, chili pwd. or salt after cooking.
