pickle relish

I got this from a friend a long time ago, about 25-30 years ago. I grew all the vegetables in my garden and canned it! This made the best tarter sauce ever! The relish, mayo, a little Worcestershire sauce and dill and I think a pinch of sugar. Of course I used the relish on hamburgers and hot dogs!!

Ingredients

  • 6 quarts cucumbers-10 cups ground
  • 2 - onoins
  • 1 - green pepper
  • 1 - red pepper
  • 3 large carrots
  • 1/2 cup salt
  • 5 cups sugar with 2 teaspoons corn starch
  • 1 teaspoon each cinnamon, turmeric, dry mustard
  • 2-3 cups vinegar

How To Make pickle relish

  • Step 1
    Grind all the vegetables, I used my food processor. Mis in salt and let stand for 3 hours. Drain in a colander till it doesn't drip.
  • Step 2
    Place in large kettle and add vinegar to just cover and add remaining ingredients. Bring to a boil, cook for 30 min. can and seal.
