This is an adaptation of a very old recipe from Plantation Days

Ingredients

  • 1 cup chopped drained oysters
  • 4 - eggs, separated
  • - salt and pepper to taste
  • 6 tablespoons flour
  • 2 tablespoons onion, minced
  • 1 tablespoon bell pepper, minced (optional)

How To Make oyster fritters

  • Step 1
    Beat yolks til thick & creamy. Add onions and bell pepper, salt and pepper then flour a little at a time. Fold in oysters and stiffly beaten egg whites. Drop by spoonfuls in hot grease.
