Okra lovers DELIGHT! This is really a vegetarian version of something one might find with shrimp. The addition of the carrots and beautiful red and yellow peppers makes it so much more inviting.

Ingredients For okra beignets

  • 2 c
    thin sliced okra
  • 1/2 c
    sweet peppers (red and yellow)
  • 1/4 c
    onion, diced fine
  • 2
    eggs, lightly beaten
  • 1/2 c
    carrot, grated
  • 1/4 c
    heavy cream
  • 1 c
    panko bread crumbs
  • 1 c
    flour
  • 1/2 Tbsp
    baking powder
  • 1 c
    vegetable oil (enough for frying)
  • salt and pepper to taste
  • GARNISH:
  • 1 bunch
    green onions sliced thin or chives

How To Make okra beignets

    Slice okra thin, chop the sweet peppers to a fine dice, same with the onions. Grate the carrots and mix together in a large bowl.

    In another bowl, slightly beat the eggs and add the whipping cream. Pour over the veggies and mix well.

    In a separate bowl, combine the flour, Panko crumbs and baking powder. Use a fork to incorporate it all.

    Add the Panko mix to the veggies and mix well with a rubber spatula. Meanwhile, heat the oil to 350F. I use my electric skillet for this because it maintains the heat much better than a skillet.

    If you have disposable food service gloves, don them now...this is a sticky mess. Pack on about 1/4 cup of the mix onto the rubber spatula and slide it into the hot oil. Keep adding in "patties". You will know when they have been browned enough to turn (about 3 minutes each side). Remove to a paper towel lined plate.

    Garnish with thinly sliced green onions.
