no sugar black bean and corn salad
While this recipe contains no sugar, there is a tangy citrus flavor throughout. The flavor of the cilantro is melded nicely. My family had this salad and loved it. Some of my children have cut way back on their sugar intake so this worked out very nicely. It also makes the recipe more acceptable to diabetics. It is one of my "go-to" recipes. This salad makes a good accompaniment to fish and chicken entrees. It is also good with burgers and sandwiches. It is a great snack or lunch on its own.

- 2 cans black beans, washed and drained
- 1 can sweet yellow corn
- 1 medium cucumber, peeled and diced
- 1 medium sweet pepper, yellow or red, diced
- - zest of 1 lime
- - juice of 1 lime
- - zest of 1 lemon
- - juice of 1 lemon
- 1/2 cup fresh cilantro, small pieces

Step 1Thoroughly Rinse and Drain beans

Step 2Add drained can of corn

Step 3Chop cucumber and sweet pepper

Step 4Stir bean and vegetables well.

Step 5Zest lime and lemon, Add zest to bean and vegetable mixture.

Step 6Add juice of lime and lemon to mixture. Stir thoroughly.
