1Rinse black eyed peas. Remove any dark or imperfect beans. Soak overnight.
2Chop onion and sauté with garlic just until flavors are released. 2-3 minutes...
3Drain and rinse beans and add to crock pot along with vegetables broth, onion and garlic. Cook on high 2 hours or low for 4-5 hours. I like mine to melt in my mouth. If you prefer them more firm simply adjust cook time. Enjoy!
4In a crunch? You can also boil fresh beans on stove for one hour instead of an overnight soak.
Crave meat? Add a smoked turkey butt or neck to crock pot.
