I love these yellow bean pickles that were Mum's recipe. They are tart and tasty, and I hope you'll enjoy them! They are wonderful with baked ham.

Ingredients

  • 4 quarts yellow beans
  • 2 cups white vinegar
  • 4 cups white sugar
  • 1 tablespoon turmeric
  • 3 tablespoons all-purpose flour
  • 3 tablespoons dry mustard
  • 1 teaspoon celery seed

How To Make mum's yellow bean mustard pickles

  • Step 1
    Boil beans in salted water until tender. Strain, put back into the pot, and set aside.
  • Step 2
    Mix all dry ingredients in a saucepan. Add vinegar and stir well to remove any lumps. Heat and boil until thickened. Reduce the heat to low.
  • Step 3
    Put the pot with beans on the burner and add the mixture to the beans. Just heat through thoroughly (about 5 mins - don't let boil).
  • Step 4
    Put into sterilized jars and seal.
