Ingredients For moroccan bulgur and lentils

  • 2 Tbsp
    butter
  • 1/4 c
    blanched slivered almonds
  • 1/2 c
    uncooked bulgur
  • 1/4 c
    dry lentils, rinsed
  • 1/4 c
    chopped onion
  • 1 can
    14.5 oz. can chicken broth
  • 1/4 tsp
    cinnamon
  • 1/8 tsp
    ground red pepper (cayenne)
  • 1/3 c
    chopped dried apricots

How To Make moroccan bulgur and lentils

    Melt butter in a large skillet over medium-high heat. Cook and stir almonds 1-2 minutes or until browned (be care not to burn). Remove almonds with a slotted spoon; set aside.

    Add bulgur, lentils and onion; cook and stir 2-3 minutes or until onion is crisp-tender. Add broth, cinnamon and ground red pepper; bring to a boil and then reduce heat. Cover and simmer 20-30 minutes or until liquid is absorbed.

    Stir in almonds and apricots; heat thoroughly.
