homemade refried beans
I had some cranberry beans in the freezer that I'd fixed a few weeks earlier that I wanted to use. I made an enchilada casserole and I served these beans with another side of Spanish rice. It was so good, I decided to share my recipe here. Enjoy!

Ingredients
- 2 cups cooked pinto beans or cranberry beans (i used leftover cranberry beans that i had cooked and previously frozen)
- 1 small onion, chopped fine
- 1 to 2 tablespoons lard or shortening (i used lard)
- salt and pepper to taste
- grated cheese (your choice) for topping. i used white cheddar in the picture.
How To Make homemade refried beans

Step 1Melt lard/shortening in a skillet. When grease is hot, add onions and saute on medium heat until cooked and transparent. Add beans, mashing them with a spatula. Add salt and pepper to taste and continue cooking. Using a spatula, continue mashing and scraping the bottom. Cook for about 10 to 15 minutes or until hot and bubbly.

Step 2Remove from heat and top with your favorite shredded cheese and cover. When cheese has melted, serve with tacos, enchiladas, or your favorite Mexican dish.
