I got this recipe from Dr. Ben Kim and doctored it up a bit to suit my taste. These are the BEST homemade baked beans I've ever had! Everyone loves them and wants the recipe.

Ingredients
- 1 cup dried navy beans, soaked for at least 6 hours.
- 1 medium yellow onion, finely diced
- 14 ounces can diced tomatoes (experiment with the different flavors)
- 1 clove minced garlic
- 1 teaspoon dried oregano (basil is also fine)
- 1 1/2 tablespoons maple syrup (honey is also fine)
- 1 tablespoon soy sauce
- 1/2 teaspoon dijon mustard
- 4 cups vegetable broth (or water)
- 1 1/2 cups chicken broth (or water)
- - extra virgin olive oil
How To Make healthy baked beans

Step 1Thoroughly rinse and drain soaked beans.

Step 2In a heavy saucepan, cook the onions, garlic, and oregano in olive oil over low to medium heat for about 5 minutes, or until the onions are translucent.

Step 3Add the navy beans and all other ingredients except the tomatoes. Place lid on saucepan, but leave it open just a crack to allow steam to escape, and cook over low to medium heat for about an hour.

Step 4Add tomatoes and cook for another 3 to 4 hours over low to medium heat. As the ingredients cook, check the saucepan from time to time to make sure that everything is well covered with liquid.

Step 5When mixture has thickened, it's ready to be served. Enjoy!
