1Chop all (I use a food processor) combine all vegetables, add 1/2 cup salt and let set overnight.
Drain and rinse. Mix vinegar, mustard seeds, celery seeds, water, turmeric and sugar in stainless steel pot. Bring to boil, mix in all the vegetables and bring to a boil for 10 minutes. If desired thickness is not what you want, mix 1/2 cup cold water with 1/3 cup cornstarch. Pour into vegetable and vinegar mixture, cook to thicken.
Put into clean jars, put flats and rings on jars. Put into hot bath for 20 minutes.
Makes around 8 quarts.
