Green tomatoes are one of the first staple garden plants to come on. This is a take off on traditional fried green tomtoes. Very easy to prepare and makes a wonderful side dish.

- 5-6 medium green tomatoes (diced into 1-2 in chunks)
- 3 cups bread crumbs (separated)
- 1/2 cup corn meal
- 1 cup buttermilk
- 1 large egg
- 1 stick unsalted butter (separated, melted)
- 1/2 cup parmesan cheese grated
How To Make green tomato casserole

Step 1Preheat oven to 400. Melt 1/2 of a stick of butter in a 2 qt casserole dish and 1/2 of a stick of butter in a separate microwave safe cup

Step 2Chop green tomatoes into 1-2 inch chunks. In a mixing bowl whip egg and buttermilk together. Add tomatoes to bowl and coat well

Step 3Place 2 cups of the bread crumbs and corn meal in a gallon size bag, shake to mix, add tomato dices and shake to coat completely

Step 4Add coated tomato dices to casserole dish and pour remaining melted butter over.

Step 5Add remaining 1 cup of bread crumbs and. One meal, sprinkling over the top, then add Parmesan cheese, sprinkling over the top

Step 6Bake for 30 min till golden brown on top and enjoy!!
