I found this recipe in a magazine several years ago. It is great for summer when you have fresh tomatoes from the garden. It is very light but also filling.

Ingredients
- 4 large tomatoes
- 4 ounces feta cheese, crumbled
- 1/4 cup fine dry breadcrumbs
- 2 tablespoons green onions
- 2 tablespoons fresh parsley
- 2 tablespoons olive oil
How To Make feta stuffed tomatoes

Step 1Cut 4 tomatoes in half horizontally. Scoop out pulp, discard seeds and coarsly chop pulp.

Step 2Stir pulp, feta cheese, breadcrumbs, green onions, parsley and olive oil in medium bowl. Spoon into tomato shells. Place in 13x9 dish and bake at 350 for 15 min.
