I found this recipe in a magazine several years ago. It is great for summer when you have fresh tomatoes from the garden. It is very light but also filling.

Ingredients For feta stuffed tomatoes

  • 4 lg
    tomatoes
  • 4 oz
    feta cheese, crumbled
  • 1/4 c
    fine dry breadcrumbs
  • 2 Tbsp
    green onions
  • 2 Tbsp
    fresh parsley
  • 2 Tbsp
    olive oil

How To Make feta stuffed tomatoes

  • 1
    Cut 4 tomatoes in half horizontally. Scoop out pulp, discard seeds and coarsly chop pulp.
  • 2
    Stir pulp, feta cheese, breadcrumbs, green onions, parsley and olive oil in medium bowl. Spoon into tomato shells. Place in 13x9 dish and bake at 350 for 15 min.
