Ingredients
- 2 tablespoons vegetable oil
- 1 small onion, finely sliced
- 1 - red chili pepper, seeded and sliced
- 1 clove garlic, minced
- 1/2 teaspoon finely grated fresh ginger
- 1/2 teaspoon dried shrimp paste
- 1 large ripe tomato, diced
- 1 tablespoon white vinegar
- 1/2 teaspoon salt
- 1 tablespoon palm sugar
- 3 tablespoons soy sauce
- 1/2 cup water
- 4 - hard boiled eggs, peeled and halved
How To Make eggs in soy sauce

Step 1Heat oil in a saucepan over medium heat and fry the onion, chili, garlic and ginger until onion is soft and starts to turn golden.

Step 2Add shrimp paste and fry, mashing with the back of a spoon. Add tomato and cook until tomatoes is pulpy.

Step 3Add vinegar, salt, sugar, soy sauce and water. Cover and simmer until sauce is thickened and smooth.

Step 4Add egg halves and heat through.
