Ingredients

  • 2 tablespoons vegetable oil
  • 1 small onion, finely sliced
  • 1 - red chili pepper, seeded and sliced
  • 1 clove garlic, minced
  • 1/2 teaspoon finely grated fresh ginger
  • 1/2 teaspoon dried shrimp paste
  • 1 large ripe tomato, diced
  • 1 tablespoon white vinegar
  • 1/2 teaspoon salt
  • 1 tablespoon palm sugar
  • 3 tablespoons soy sauce
  • 1/2 cup water
  • 4 - hard boiled eggs, peeled and halved

How To Make eggs in soy sauce

  • Step 1
    Heat oil in a saucepan over medium heat and fry the onion, chili, garlic and ginger until onion is soft and starts to turn golden.
  • Step 2
    Add shrimp paste and fry, mashing with the back of a spoon. Add tomato and cook until tomatoes is pulpy.
  • Step 3
    Add vinegar, salt, sugar, soy sauce and water. Cover and simmer until sauce is thickened and smooth.
  • Step 4
    Add egg halves and heat through.
