Ingredients

  • 2 Tbsp
    vegetable oil
  • 1 small
    onion, finely sliced
  • 1
    red chili pepper, seeded and sliced
  • 1 clove
    garlic, minced
  • 1/2 tsp
    finely grated fresh ginger
  • 1/2 tsp
    dried shrimp paste
  • 1 large
    ripe tomato, diced
  • 1 Tbsp
    white vinegar
  • 1/2 tsp
    salt
  • 1 Tbsp
    palm sugar
  • 3 Tbsp
    soy sauce
  • 1/2 c
    water
  • 4
    hard boiled eggs, peeled and halved

How to Make Eggs in Soy Sauce

Step-by-Step

  1. Heat oil in a saucepan over medium heat and fry the onion, chili, garlic and ginger until onion is soft and starts to turn golden.
  2. Add shrimp paste and fry, mashing with the back of a spoon. Add tomato and cook until tomatoes is pulpy.
  3. Add vinegar, salt, sugar, soy sauce and water. Cover and simmer until sauce is thickened and smooth.
  4. Add egg halves and heat through.
