My English grandmother made this and then my mom for every thanksgiving and Christmas. I think grandma got this from her mom.Grandma would be about 140 yo so this is an old but goody .. I had to learn watching the 2 of them no written recipe. this may be the first time it has been put to writing or texting lol. We lovingly called it dog food as dubbed by my dad and the tradition continues. Always had to double so the kids could have left overs Thou sometimes the reserved for left over ended up being used for the dinner as people like it so much.

Ingredients For mamas english dressing

  • 1 pkg
    loaf bread
  • 1 - 2 qt
    chicken or turkey stock
  • 1 lg
    onion
  • 5 stalk
    celery
  • 1
    turkey liver and heart gizzard optional ( innard bag from turkey)
  • 2 tsp
    thyme, dried
  • 2 tsp
    sage, dried
  • 1 tsp
    rosemary, dried
  • 1 tsp
    salt
  • 1 tsp
    ground black pepper
  • 2 Tbsp
    oil

How To Make mamas english dressing

    Lay bread out and thoroughly dry out. I usually do this 2 days before making to make sure its dry. Humidity can affect length of drying time. It has to be dried through or it turns to mush. Once bread is dry break into 1 inch pieces and place in large bowl

    Heat oil in large skillet and add onions and celery. Cook until onions are almost clear and celery is pliable

    Cook liver heart and gizzards until done and chop Chop up
  • 4
    Sprinkle herbs onto bread and toss
  • 5
    Add onions celery and chopped liver etc to bread and toss

    You can use canned stock or juices from the cooked turkey. I use both in mine sometimes the bird doesn't make quite enough so have some canned too incase

    Pour 1 qt of stock on to bread mixture. Mix well. Keep adding stock by the cup full and mix between additions until when you pat it down there is almost standing liquid. not floating in it but thoroughly soaked. Here again humidity can affect amounts needed

    Place in casserole dish, cover and bake in preheated 350° oven for 1 hour

    Uncover and continue to bake until browned and when pushed in center it springs back 20 -30 minutes
