dixie corn cakes (pancake like)
This was my PA Dutch grandmother's recipe as she lived with us and was the main cook till I moved out at age 21. She would of been 96 this year (2016).

Ingredients
- 1/2 cup unsifted all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
- 2 - eggs, slightly beaten
- 1/2 cup milk
- 2 tablespoons butter, melted and slightly cooled to not scramble the eggs
- 1 - 12oz. canned corn drained
- 2 tablespoons onion, finely chopped
- 1 tablespoon fresh parsley, chopped, or 1 tsp. dried parsley
How To Make dixie corn cakes (pancake like)

Step 1Whisk together flour, baking powder, and salt and set aside. Combine eggs, milk, melted butter, corn, onion, and parsley. Stir in dried ingredients until batter is well blended.

Step 2Lightly grease non stick griddle with butter. Use an ice cream scoop or 3 tblsp. and drop onto med/hot griddle. Fry until golden brown on each side. My grandmother would butter then before serving, others would drizzle maple syrup.
