Ingredients
- 1 tablespoon smart balance spread
- 1 teaspoon salad oil
- 1 large onion, halved lengthwise and sliced thin
- 3/4 cup pearl barley, uncooked
- 1 2/3 cups salt free chicken stock
- - chopped parsley
- - fresh ground pepper
How To Make barley onion pilaf

Step 1Heat spread and oil in 4-qt saucepan over med-high heat. Add onion and cook, stirring often, until limp and golden-about 15 min.

Step 2Add barley and cook, stirring, until lightly toasted-about 3 min.

Step 3Add chicken stock and bring to a boil over high heat; reduce heat, cover, and simmer until barley is tender and liquid is absorbed-about 35 min.

Step 4Stir in parsley and season to taste with pepper.
