I have been going through my recipe books and this is a good recipe that I thought should be shared. Enjoy.

Ingredients

  • 1 tablespoon smart balance spread
  • 1 teaspoon salad oil
  • 1 large onion, halved lengthwise and sliced thin
  • 3/4 cup pearl barley, uncooked
  • 1 2/3 cups salt free chicken stock
  • - chopped parsley
  • - fresh ground pepper

How To Make barley onion pilaf

  • Step 1
    Heat spread and oil in 4-qt saucepan over med-high heat. Add onion and cook, stirring often, until limp and golden-about 15 min.
  • Step 2
    Add barley and cook, stirring, until lightly toasted-about 3 min.
  • Step 3
    Add chicken stock and bring to a boil over high heat; reduce heat, cover, and simmer until barley is tender and liquid is absorbed-about 35 min.
  • Step 4
    Stir in parsley and season to taste with pepper.
