How to Make Barley Onion Pilaf
- Heat spread and oil in 4-qt saucepan over med-high heat. Add onion and cook, stirring often, until limp and golden-about 15 min.
- Add barley and cook, stirring, until lightly toasted-about 3 min.
- Add chicken stock and bring to a boil over high heat; reduce heat, cover, and simmer until barley is tender and liquid is absorbed-about 35 min.
- Stir in parsley and season to taste with pepper.
