Ingredients

  • 1 Tbsp
    smart balance spread
  • 1 tsp
    salad oil
  • 1 large
    onion, halved lengthwise and sliced thin
  • 3/4 c
    pearl barley, uncooked
  • 1 2/3 c
    salt free chicken stock
  • ·
    chopped parsley
  • ·
    fresh ground pepper

How to Make Barley Onion Pilaf

Step-by-Step

  1. Heat spread and oil in 4-qt saucepan over med-high heat. Add onion and cook, stirring often, until limp and golden-about 15 min.
  2. Add barley and cook, stirring, until lightly toasted-about 3 min.
  3. Add chicken stock and bring to a boil over high heat; reduce heat, cover, and simmer until barley is tender and liquid is absorbed-about 35 min.
  4. Stir in parsley and season to taste with pepper.
