I have been going through my recipe books and this is a good recipe that I thought should be shared. Enjoy.

1 Tbsp
smart balance spread
1 tsp
salad oil
1 large
onion, halved lengthwise and sliced thin
3/4 c
pearl barley, uncooked
1 2/3 c
salt free chicken stock
chopped parsley
fresh ground pepper

How to Make Barley Onion Pilaf


  • 1Heat spread and oil in 4-qt saucepan over med-high heat. Add onion and cook, stirring often, until limp and golden-about 15 min.
  • 2Add barley and cook, stirring, until lightly toasted-about 3 min.
  • 3Add chicken stock and bring to a boil over high heat; reduce heat, cover, and simmer until barley is tender and liquid is absorbed-about 35 min.
  • 4Stir in parsley and season to taste with pepper.
