This is a lovely party dish. Very pretty and it tastes great. It is well worth the extra effort.

  • ·
    4 large oranges halved and hollowed out, set aside until needed
  • ·
    3 large sweet potatoes, peeled, coarsely chopped
  • ·
    1/2 cup fresh squeezed orange juice
  • ·
    2 tbsp pineapple rum
  • ·
    1 tsp baking powder
  • ·
    1/4 cup strong kona coffee
  • ·
    1/4 cup sugar, brown
  • ·
    2 tbsp honey
  • ·
    2 tbsp butter
  • ·
    salt and ground black pepper (to taste)
  • ·
    1/3 cup macadamia nuts, coarsely chopped
  • ·
    1/3 cup crushed pineapple, drained (no liquid) /
  • ·
    1/4 teaspoon cinnamon, ground fresh
  • ·
    1/8 teaspoon nutmeg, ground fresh
  • ·
    parsley, finely chopped (garnish)
  • ·
    toasted coconut, garnish (optional)

How to Make Baked Sweet Potatoes


  1. Add the sweet potatoes into a pot of water, add orange juice and boil until tender, drain and mash really well.
  2. Place the warm potatoes in a large bowl and add all the ingredients making sure to mix well, after each addition.
  3. To serve: Fill the orange halves with the sweet potato mixture and garnish with parsley and toasted coconut.
