baked sweet potatoes

Ingredients
- - 4 large oranges halved and hollowed out, set aside until needed
- - 3 large sweet potatoes, peeled, coarsely chopped
- - 1/2 cup fresh squeezed orange juice
- - 2 tbsp pineapple rum
- - 1 tsp baking powder
- - 1/4 cup strong kona coffee
- - 1/4 cup sugar, brown
- - 2 tbsp honey
- - 2 tbsp butter
- - salt and ground black pepper (to taste)
- - 1/3 cup macadamia nuts, coarsely chopped
- - 1/3 cup crushed pineapple, drained (no liquid) /
- - 1/4 teaspoon cinnamon, ground fresh
- - 1/8 teaspoon nutmeg, ground fresh
- - parsley, finely chopped (garnish)
- - toasted coconut, garnish (optional)
How To Make baked sweet potatoes

Step 1Add the sweet potatoes into a pot of water, add orange juice and boil until tender, drain and mash really well.

Step 2Place the warm potatoes in a large bowl and add all the ingredients making sure to mix well, after each addition.

Step 3To serve: Fill the orange halves with the sweet potato mixture and garnish with parsley and toasted coconut.
