I came up with this one day when I had a pineapple that was getting ripe. It is great as a side dish for fish or burgers and sausages.

Ingredients
- 1 - pineapple
- 1 medium red or vidalia sweet onion
- 1 medium red, orange or yellow pepper
- 1 bunch cilantro, fresh
- 1/4 cup lemon or lime juice
- 1 dash cracked black lemon pepper
How To Make pineapple salsa

Step 1Cut and core a fresh pineapple. I usually cut into small pieces.

Step 2Cut the peppers & onions into small pieces.

Step 3Chop the cilantro to the desired consistency you wish, I usually do a fine chop

Step 4Mix all of the ingrediants in a bowl. Add the cracked pepper and lemon juice.

Step 5Put bowl into fridge and chill for a hour.
