I came up with this one day when I had a pineapple that was getting ripe.
It is great as a side dish for fish or burgers and sausages.

Ingredients

  • 1
    pineapple
  • 1 medium
    red or vidalia sweet onion
  • 1 medium
    red, orange or yellow pepper
  • 1 bunch
    cilantro, fresh
  • 1/4 c
    lemon or lime juice
  • 1 dash(es)
    cracked black lemon pepper

How to Make Pineapple Salsa

Step-by-Step

  1. Cut and core a fresh pineapple.
    I usually cut into small pieces.
  2. Cut the peppers & onions into small pieces.
  3. Chop the cilantro to the desired consistency you wish, I usually do a fine chop
  4. Mix all of the ingrediants in a bowl.
    Add the cracked pepper and lemon juice.
  5. Put bowl into fridge and chill for a hour.
