These are perfect for when you become an empty nester and the kids are to far away, or a perfect holiday basket of goodies for that shut-in neighbor of yours, or when you are just starting out and are on your own for the holidays. Each dish is made with 1/2 a (12 oz)bag of cranberries and 1/2 of a small can crushed pineapple

Ingredients

  • 1/2 - a 12 oz bag cranberries
  • 3 ounces cream cheese
  • 1/2 package cool whip (8oz)
  • 1/2 small can crushed pineapple
  • 1/2 cup sugar
  • RECIPE TWO
  • 1/2 - a 12 oz bag cranberries
  • 1/2 small can crushed pineapple
  • 1/2 cup sugar
  • 1/8 cup brown sugar
  • 1-2 dash nutmeg
  • 4 tablespoons chopped walnuts
  • MISSED INGREDIENT FROM RECIPE #1
  • 2 cups mini marshmallows

How To Make only two for the holidays ~ two cranberry dishes~

  • Step 1
    Recipe #1 Cranberry salad Chop 1/2 bag of cranberries and add 1/2 cup sugar, set in fridge for 2-4 hours. In a medium bowl add softened cream cheese, pineapple with liquid, cranberries, and whipp cream. Mix toghter until well blended. Add mini marshmallows and mix well. put in fridge over night.
  • Step 2
    Recipe #2 Cranberry Relish Take the 1/2 bag cranberries and put in small sauce pan with the sugar and the 1/2 can pineapple. Heat to medium and stir while it comes to a boil. Allow to boil until all the cranberries have poped and mask lightly. Add the nutmeg when it thickens. Take off stove and add nuts.. Place in nice serving dish and allow to sit in fridge over night.
  • Step 3
    NOTE: wash and check each cranberry for firmness and spoilage before starting these recipes. Total time for both recipes takes about 20 minutes plus the chopping from 4 hours earlier. And the best part it is completed the night before so there is less to think of the day of Thanksgiving or Christmas
