jell-o fat-free fruit salad
When I needed to lose weight and add better things to my health, I came up with this. I eat it almost every night or just for lunch!
Blue Ribbon Recipe
This fruit salad is a vintage recipe from the 1960s that's an oldie but a goodie. Using sugar-free products makes for a lighter, less guilt, refreshing salad. It has a fluffy texture with sweet chunks of fruit. The cottage cheese is barely noticeable, but it does add a slight savoriness to the salad. Great for summer BBQs. Ours was chilled perfectly at about 4-5 hours.

How To Make jell-o fat-free fruit salad
Test Kitchen Tips
We could not find sugar-free strawberry banana gelatin. We substituted it with sugar-free strawberry gelatin.
-
Step 1First gather up your extra large, non-plastic bowl. Heat in microwave to boil 2 cups of water in a glass measuring cup. Pour water into the large bowl. Then add the Jell-O. Whip and beat for 2 minutes.
-
Step 2Next, use the cold water method by adding ice cubes to the measuring cup and then add cold water until you have 2 cups. Pour in cold water with the Ice. Beat and whip for 2 minutes until all the ice has melted.
-
Step 3Drain your pineapple and your fruit cocktail in a strainer. When drained, bang the strainer on the sink to make sure all is drained.
-
Step 4Add the drained fruit to the Jell-O.
-
Step 5Drain the cottage cheese. When drained well, again beat the strainer on the sink to make sure all is drained. Mix the cottage cheese until all is well mixed.
-
Step 6Fold in the Cool Whip until everything is mixed well.
-
Step 7Cover and chill. You now have a frothy top with layers resting halfway down to the bottom. If you make this in the early morning, it will be ready to eat at dinner. After about the 3rd serving there will be what appears to be water lingering a bit in the bottom. This is normal and will not affect the taste. Do not try to pour it off as you could pour everything away. Enjoy!
